Today I have a tip on how to make matcha (green tea powder) lemonade. For two glasses of refreshing matcha lemonade, start by sifting 2 grams, or about 1 teaspoon, of matcha powder into a bowl or measuring cup. Add 60 ml of hot water at around 80 degrees Celsius (175 degrees Fahrenheit) and whisk it with a ‘chasen’, or bamboo matcha whisk. Avoid boiling water, as it can make the matcha taste bitter. The chasen’s fine, flexible bristles help break up the powder evenly and create a light layer of foam, which is difficult to achieve with a regular kitchen whisk. In a large jug or shaker, mix 2 tablespoons of fresh lemon juice with 1 to 2 tablespoons of syrup until dissolved, then stir in the prepared matcha. Add 400 ml of cold or sparkling water and mix well. Pour over ice into two glasses and garnish with lemon or lime wedges, fresh mint, or cucumber, if desired.
