Are you watching your weight or wanting to eat a little healthier? Here’s a tip on how you can turn fresh cauliflower into light, fluffy cauliflower rice. Start by washing one medium head of cauliflower and drying it completely. Cut it into large chunks, keeping the core if you would like while removing the leaves. Transfer the cauliflower pieces to a food processor and pulse until they break down into small, rice-sized pieces. If you need to, work in batches, and be careful not to over-process the cauliflower, as it can quickly become soft and mushy. At this point, the cauliflower rice is ready to be utilized in any recipe that specifically calls it. If you’re serving cauliflower rice as a side dish or using it as a substitute for regular rice, lightly sautéing it can improve its texture and mellow its raw flavor. Just heat 5 milliliters (1 teaspoon) of extra-virgin olive oil in a large skillet over medium heat. Then add 50 grams (½ cup) of chopped scallions with 2-3 cups of cauliflower rice, and sauté for approximately 3 to 5 minutes, or until it’s warmed through. Lastly, season it with salt and pepper, then add in juice from half of a lime to brighten the flavor and balance any bitterness. Cauliflower rice is a versatile, low-carb alternative to traditional rice and works beautifully in stir-fries, burrito bowls, fried rice, and more.
